Glenda Wright is cooking up an award winning meatloaf recipe

The Homemakers Association is back with another simple beef recipe, and this week it’s brought to you by Glenda Wright.

This voluntary organization has a special place in the heart of the community and especially for its dedicated members like Wright. For the past 50 years, the Homemakers have played a vital role in supporting the efforts of the Christian County Extension Office, enhancing access to rural America through their lessons, meetings, and cookbooks.

Wright says, half of Christian County likely owns a version of the Homemakers cookbooks, which became immensely popular and led to an expanded edition in 2007. Wright was fortunate to contribute to this edition, showcasing a variety of recipes from appetizers to game meat.

Wright says her meatloaf recipe is inspired by the 2007 cookbook and easily became a staple in her family dinners. She says cooking for her family helps life slow down from the busyness of life, so she wants to encourage everyone to sit down and enjoy this meal with theirs.

Here’s Wright’s recipe:

Ingredients:

Meat Mixture:

1 1/2 pounds of ground beef

1 cup of oats

2 eggs

1/4 cup of onions

1/4 tsp black pepper

1 cup of tomato juice

2 tbsp of salt

Toping:

Ketchup

Instructions:

Step 1: Preheat the oven to 350 degrees.

Step 2: In a large bowl combine ingredients for the meat mixture, then pack in a loaf pan and cover with ketchup.

Step 3: Place in the oven to cook for 1 hour, after cooking you can add an additional layer of ketchup to cover the meatloaf.

Step 4: Serve and Enjoy!
