Chicken Salad Chick cuts the ribbon, open for business

Hopkinsville now has a new eatery on Fort Campbell Boulevard, as Chicken Salad Chick officially cut the ribbon and opened its doors Wednesday.

The restaurant that specializes in multiple varieties of chicken salad is located in the front parking lot of the Bradford Square Mall near Zaxby’s has created 50 new jobs—this is the 154th store the business has opened.  President and CEO Scott Diveney says they are eager to serve the community, which he calls the cornerstone of the restaurant’s success.

He says they will also help give back—during the grand opening, officials presented a $3,140 donation to the Jennie Stuart Health Foundation to support local cancer patients.  Foundation Executive Director Tracey Clark says that money will help those patients who need financial assistance to get the treatments they require.

Chicken Salad Chick does offer more than just chicken salad—they also have various soups, sandwiches, baked goods, side items and more.  They’ll be open Monday through Saturday from 10 a.m. until 8 p.m.
